Breakfast for Dinner

Good afternoon lovely ladies (and men, if there are any)! I hope you're all doing well today! I have good news! I graduated from physical therapy today! I have tendinitis in my knee, but my therapist said I'm doing well and I don't need to continue coming to therapy! Very excited. To celebrate, I think I'll have some BFD (Breakfast For Dinner). Here's a delicious recipe for healthy pancakes. Sorry for no pictures, but it's not dinner time yet so I can't make them yet. Keep in mind this recipe is only one serving, so if you're cooking for more than one person, you may want to expand the recipe.

Ingredients:
3/4 cup egg whites
2/3 cup chopped strawberries fresh or frozen
1/2 cup rolled oats
1/2 tsp. sugar substitute
1/2 cup nonfat yogurt
1/4 cup blueberries

1. Beat the egg whites, strawberries, rolled oats, and sugar substitute until smooth.
2. Spray a nonstick skillet with cooking spray. Ladle 1/4 cup of batter into the skillet. Cook around the edges of the pan. When the edges of the pancake start to bubble, push it toward the center of the pan. Cook until batter sets in the middle. Turn the pancake and cook for one more minute.
3. Repeat with remaining batter. Then put on a plate and top with yogurt and blueberries.

Don't those sound delicious?! I think so too. I have to go walk my dog and give her a bath before dinner so I hope you all enjoy the pancakes and have a wonderful day!
